Grain-free Protein Waffles
  1. First, prepare the collagen jam by placing a small pot on medium heat and adding in the blueberries.

  2. Once it begins to bubble, add in the remaining ingredients and mix to combine. Let simmer for 2-3 minutes and then take off the heat and let cool in the fridge.

  3. For the waffles, add all of the dry ingredients into a large bowl and mix to combine. Add in the remaining ingredients and whisk until no lumps remain.

  4. Let the batter thicken while you preheat your waffle iron on medium heat. Lightly grease and scoop in the batter and let cool until cooked through and golden brown.

  5. Top with the collagen jam, your other favorite toppings, and enjoy!

  6. Store extra waffles/jam in the fridge for up to 10 days or the freezer for six months.
