Salt & peppered steak. Put on wire rack, uncovered in fridge for 3 hours.
Then bring back to room temperature: 30 minutes on the counter.
Preheat oven to 415°F
Pan-sear with butter in cast iron skillet, 2 minutes each side.
Move skillet with steaks to oven preheated to 415°F. Finish in oven about 5-6 minutes for medium-rare.
Top with garlic butter.
