Add the ground beef, grated onion, chili, cilantro, breadcrumbs, egg, ground ginger, granulated garlic, ground cumin, ground coriander, cayenne pepper, and salt to a large bowl. Mix until combined (better with clean hands).
With a ¼ cup measure, scoop out the ground beef mixture and use your hands to form into round patties — about 3 inches in diameter.
Heat a large skillet over medium-high heat with 1 tablespoon of AWAKE olive oil and fry the kebabs until deep brown and charred on both sides. Tip: use a spatula to gently smash the kebab down for more charry/crispy bits — about 4 minutes per side.
