Creamy Mushroom & Spinach Chicken with Dijon Sauce

Season chicken thighs generously with salt and black pepper on both sides.

Heat avocado oil in a large skillet over medium heat. Add chicken and cook 5-6 minutes per side until golden brown and cooked through. Remove chicken and set aside.

In the same skillet, melt butter. Add garlic and mushrooms, cooking 4-5 minutes until fragrant and mushrooms soften.

Pour in vegetable broth, coconut cream, Dijon mustard, and Pecorino Romano. Simmer for 5 minutes until sauce slightly thickens. Season with salt and pepper.

Add fresh kale or spinach, stirring until wilted into the sauce.

Return chicken to the skillet, spooning sauce over the top. Simmer 2-3 minutes to blend flavors.

If desired, sprinkle with crispy prosciutto pieces before serving.

Serve warm with your favorite side.
