In a bowl, combine chopped shrimp and margarita mix. Top with salt and pepper to taste. Let marinade for 30 minutes to 1 hour.
Preheat skillet over medium-high heat. Drain away excess margarita marinade and add shrimp to the skillet, cooking until opaque. Drain.
In a large microwave safe bowl, combine Velveeta and Ro*tel. Microwave on high for 2 minutes. Stir, and continue to microwave until melted through.
Add in margarita shrimp and stir. Serve immediately.
