  1. Deep fry eggs

  2. Combine fish sauce (2 parts), water (2 parts), and sugar (1 part) to make dressing

  3. Adjust sweetness by adding equal parts sugar if desired

  4. Add lime juice to taste

  5. Combine fried eggs with tomato, white onion, coriander, celery leaf, toasted peanuts, red chilli, and radishes

  6. Dress with the fish sauce mixture and toss to combine
