In a medium bowl, drizzle beans with a generous amount of olive oil + lemon juice (1 part juice to 2 parts oil). Sprinkle with salt + pepper and mash together; taste for salt and acidity and add more juice, oil and/or salt if needed (or water if you'd like to loosen the beans a bit more).
Transfer beans to bowls and top with avocado, scallions + parsley (optional) and another drizzle of oil and enjoy!
Beans can be stored separately from the veggies and herbs in the fridge for up to 3-4 days and reheated in the microwave mixed with a bit of water or oil before consuming (they'll thicken in the fridge).
