Preheat the oven to 375°F and line a muffin tin with muffin liners.
In a bowl, combine the melted coconut oil, maple syrup, peanut butter, vanilla extract, and eggs. Whisk until well blended.
Whisk in the cottage cheese and Greek yogurt.
In a separate small bowl, mix the flour, baking soda, and salt. Stir in the chocolate chips.
Add the dry ingredients to the wet ingredients and mix with a spatula until just combined.
Scoop the batter into the muffin liners, filling them completely. Bake for 23-25 minutes, or until a toothpick inserted into the center comes out clean.
