Chicken Shawarma Skewers With Tzatziki And Warm Pita
  1. First, cut chicken into bite-sized pieces and place in a large bowl. Add the yogurt and seasonings. Coat well and marinate in the refrigerator for at least 30 minutes.

  2. Heat the grill to 500F. Skewer the chicken, packing the chicken closely together. Once the grill is HOT, add the chicken skewers and close the grill. Do not disturb them for ~ 10 minutes. Open the grill cover and rotate the chicken to the other side. If the chicken sticks, they are not ready to be flipped. Once they have been flipped, cook another 8-10 minutes, or until cooked through (165F).

  3. While the chicken is on the grill, add the pitas to warm, about 1-2 minutes on each side, then remove from the heat.

  4. Remove the chicken from the grill and let cool. Meanwhile, make the tzatziki. Add the yogurt to a bowl, along with the cucumbers, garlic, lemon, mint, dill and salt. Mix and adjust seasonings as needed.

  5. Spread tzatziki onto the warm pita, then the chicken, then garnish with tomatoes and parsley.
