Prepare the Dough:
Cream the softened butter and granulated sugar together in a large bowl until light and fluffy. Beat in the eggs, one at a time, followed by the vanilla extract. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually mix the dry ingredients into the wet ingredients until just combined.
Make the Cheesecake Filling:
Beat the cream cheese, sugar, and vanilla extract in a small bowl until smooth. Transfer the mixture to a piping bag for easy filling.
Shape the Cookies:
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. Roll the dough into 1-inch balls and flatten them into circles. Pipe the cheesecake filling around the edges of each cookie. Fold the dough over to enclose the filling, then use a small cookie cutter to create a donut shape by removing the center.
Coat the Cookies:
In a shallow dish, mix the granulated sugar and ground cinnamon. Roll each cookie in the cinnamon-sugar mixture to coat.
Bake the Cookies:
Place the cookies on the prepared baking sheet, leaving 2 inches of space between each. Bake for 12-15 minutes, or until the cookies are lightly golden.
