Easy Mexican Rice
  1. In a large skillet, heat oil over medium heat.

  2. Mix rice in and stir often.

  3. Once rice begins to brown, stir in the chicken broth and salsa.

  4. Reduce heat to low, cover skillet with lid, and allow to simmer 20 minutes, or until all liquid has been absorbed.

  5. Remove lid and fluff with a fork.
