Mix all the ingredients and gradually add a cup of water. You may need to add an extra splash or two of water till you give a nice bouncy but not too sticky dough.
Knead the dough very well. Brush it with oil and let rest covered for an hour.
Once it has doubled in size. Place the dough on a floured counter top and divide into 8 pieces. Roll each piece into. Ball.
Flatten the piece with your fingers and liberally dust it with flour.
Roll it with a rolling pin. Place in your hands and dust it off.
Cover with a towel and let proof for 15-20 minutes. The longer the fluffier the bread.
Heat up a pan. Place the dough and keep flipping every 10 seconds.
Once a bubble forms. Place the spatula on the bubble and gentle press to guide the bubble towards the rest of the dough to create an air pocket.
Serve it hot with some olive oil and zatar & enjoy.
