Smashed Tater Tot Potato Salad
  1. Preheat oven to 425°F. Spread tater tots on a parchment-lined baking sheet and bake for 15 minutes. Remove from oven and use the bottom of a glass to gently smash each tot into a disc (I separated the smashed tots onto two baking sheets). Return to oven and bake for another 20–25 minutes, until deeply golden and crispy. Let cool slightly.

  2. In a large bowl, whisk together the coconut yogurt, mayo, pickle brine, lemon juice, dill, garlic, Dijon, nutritional yeast, salt, pepper, onion powder, red pepper flakes (if using).

  3. Add the crispy smashed tots to the dressing and toss gently to coat. Add in the diced cucumber, pickles, scallions, and any optional mix-ins. Toss again until evenly combined.

  4. Top with additional dill and scallions. Serve immediately or chill for 10–15 minutes to let the flavors meld.
