Blend cottage cheese in a blender with pickle juice to thin out
Mix blended cottage cheese in a bowl with Greek yogurt
Add chopped pickles, dill, garlic powder, onion powder, salt, and pepper to taste
Melt 1 tbsp butter in a saute pan on medium heat
Add panko breadcrumbs and toast for a couple of minutes until golden brown
Let cool for a couple of minutes
Set 1 tbsp of toasted panko on the side for garnish and add the rest into pickle dip
Garnish with remaining toasted panko, chopped pickles and dill
Serve with crackers, carrots, celery, cucumbers, or desired accompaniments
Note: If making dip ahead of time, do not add toasted panko crumbs until ready to serve
