Wash and pat dry the fig leaves.
Heat a dry skillet over medium.
Toast the leaves for 30–60 seconds per side, just until they become fragrant and deepen in color. They might curl slightly.
Don't let them burn! A light toast is enough to bring out those coconutty oils.
Combine sugar and water in a small saucepan over medium heat.
Stir until sugar dissolves.
Add the toasted fig leaves.
Simmer gently for 10–15 minutes (don't boil hard).
Turn off heat and let steep for 30–60 minutes for more flavor.
Strain into a jar or bottle.
