Macho Nachos
  1. Preheat the oven to 180°C regular bake.

  2. Add oil to a large frying pan over medium heat. Cook the onion until soft, then add the garlic.

  3. Add the spices and cook for another minute.

  4. Pour in the red wine and let it bubble for 10 seconds.

  5. Add the lentils, beans, tomatoes, water, sugar, stock, and salt. Simmer for about 15 minutes.

  6. Bake the corn chips in the oven until crispy.

  7. Serve the bean sauce over the crunchy chips and top with aioli, avocado, coriander, lime juice, and optional sauce.
