Copycat Costa: Salted Caramel Brownies
  1. Pre-heat your oven to 200C/180C Fan/Gas Mark 6.

  2. Line an 8" Square Pan with greaseproof paper.

  3. If making it yourself, make the caramel using my foolproof recipe, so that it can cool a little before using.

  4. In a small bowl, break up the dark chocolate and melt in the microwave in 20 second intervals, stirring in between to make sure it doesn’t burn.

  5. In a large mixing bowl, whisk together butter and both sugars. With an electric/stand mixer, go for a solid 3-5 minutes so it is totally combined.

  6. Add in the eggs, one at a time and mixing in between.

  7. Add the vanilla and mix again.

  8. Slowly add the melted chocolate (check it first, to make sure it isn’t so hot that it will cook the eggs) and combine once again.

  9. Add the flour and cocoa powder, fold gently into the wet mixture with a rubber spatula or wooden spoon until just combined.

  10. Pour half the batter into the lined pan, ensure the base is covered – then add the caramel and spread over.

  11. Add the remaining brownie batter on top and spread to cover the caramel.

  12. Bake approx 25 minutes.

  13. Remove pan from oven once cooked, and leave the brownies in the pan on a wire rack until totally cooled.

  14. Then remove and slice!
