Combine the yeast and sugar with the warm water and stir well
Allow the yeast to get foamy and bubbly, about 5 minutes
In a separate bowl, combine the flour and salt together
Make a well in the flour and add the water and yeast mixture
Mix well with your hands, incorporate the water into the flour from the outside in until the dough is slightly tacky but doesn't stick to your hands
Knead the dough until smooth and elastic
Lightly grease the bowl with oil and place the dough into the bowl
Pour in roughly half a cup of oil, cover and allow to rise for 40 minutes
Pull off balls of dough and roll into individual balls
Heat up a dry pan on medium heat
Take a ball of dough, cover in grease proof paper and roll paper thin
Place them one by one in the hot pan and flip over once started to colour
Stack them up as they are ready
Put a generous spoon of butter and agave/maple syrup on top and let it melt over them
Serve immediately
