Stuffed Pork Tenderloin
  1. Preheat your oven to 375°F (190°C). Line a baking sheet or dish with foil.

  2. Butterfly the pork tenderloin by slicing it lengthwise down the middle, being careful not to cut all the way through. Open it like a book and flatten slightly with a meat mallet.

  3. In a bowl, mix together spinach, cream cheese, mozzarella, parmesan, garlic, and Italian seasoning.

  4. Spread the cheese mixture evenly over the pork, leaving a small border around the edges.

  5. Roll the tenderloin tightly and secure it with kitchen twine or toothpicks.

  6. Rub the outside with olive oil, salt, and pepper.

  7. Heat a skillet over medium-high heat and sear the pork on all sides until golden brown (about 2–3 minutes per side).

  8. Transfer to the oven and bake for 25–30 minutes, or until internal temperature reaches 145°F.

  9. Let rest for 5–10 minutes before slicing. Garnish with fresh parsley and serve warm with mashed potatoes or roasted veggies.
