Mthawamet Bandora (مثومة بندوره)
  1. Chop the tomatoes in half. Place them on a baking tray. Season with salt and a drizzle of olive oil.

  2. Place them in the oven at 200c for about 25 minutes. And broil them (top heat in the oven) on high for another 5 minutes or till the tomatoes take a color and soft and cooked.

  3. Let them cool a bit then peel them off and add them to a bowl.

  4. Mix the yogurt with tahini. Salt and 2 cloves of mashed garlic and add it on the tomatoes.

  5. Mix them very well but keep the tomatoes a bit chunky.

  6. Slice the rest of the garlic and fry in a tbsp of ghee and a tbsp of olive oil on medium heat for a couple of minutes.

  7. Once the garlic takes a bit of color. Pour it directly on the tomatoes.

  8. Serve it warm with a loaf bread. A cup of tea and enjoy.
