INGREDIENTS
Preheat oven to 300F
Put frozen cheese in a food processor or blender to chop it into tiny pieces
In a large bowl, whip egg whites with cream of tartar until VERY stiff peaks form.
Sprinkle in the chopped cheese. Using a soft spatula, fold the cheese into the egg whites, VERY CAREFULLY, takin care to not break down the whites, while thoroughly mixing the cheese throughout.
Line a large baking sheet pan with parchment.
Carefully place the mixture into a large plastic baggie, cut a ½ inch/1.3 cm hole in the corner of the baggie. 7. Gently squeeze out several 2”/5 cm lengths of the mixture onto the paper. Lightly sprinkle grated parmesan cheese on top of each puff.
Bake 20-30 minutes. The longer you can bake them without their getting too brown, the crispier they will be. For even crispier puffs, turn off the oven, and leave them in the closed oven at least another 30 minutes.
Store in a tightly sealed, air-tight container.
