Egg, Salami, And Tomato Sandwiches
  1. Adjust oven rack to middle position and heat oven to 300 degrees.

  2. Whisk eggs and salt in large bowl until well combined.

  3. Whisk in ⅔ cup water.

  4. Spray 8-inch square baking pan with vegetable oil spray.

  5. Pour egg mixture into prepared pan and set pan on rimmed baking sheet.

  6. Add 1½ cups water to sheet.

  7. Transfer sheet to oven and bake until eggs are fully set, 35 to 40 minutes, rotating pan halfway through baking.

  8. Remove pan from sheet, transfer to wire rack, and let cool for 10 minutes.

  9. Run knife around edges of pan and, using dish towel or oven mitts, invert eggs onto cutting board (if eggs stick to pan, tap bottom of pan firmly to dislodge).

  10. Cut into 4 equal squares.

  11. Spread mayonnaise on roll bottoms.

  12. Sprinkle basil over mayonnaise.

  13. Using spatula, transfer 1 egg square to each sandwich.

  14. Top each egg square with salami and then 1 tomato slice.

  15. Set roll tops over tomato and serve.
