  1. Bring a pot of water to boil

  2. Add 150 grams of gungunmian noodles to boiling water and cook for about 1 minute until just past al dente

  3. Strain the noodles quickly

  4. In a bowl, combine ¾ teaspoon MSG, ½ teaspoon sugar, 1 teaspoon light soy sauce, 1 tablespoon chili oil, 1 tablespoon yacai, and 1 tablespoon sliced scallions

  5. Transfer the hot noodles into the bowl with the seasonings

  6. Mix everything together thoroughly, adding a touch of water if needed to loosen

  7. Serve immediately and eat while hot
