Oven Chicken Pilau
  1. Add ghee, onion, garlic, ginger, cumin seeds, black seeds, salt, green chillies, cinnamon stick, black cardamom, cloves, and peppercorns to a pan

  2. Let the spices brown properly for 15–20 mins until dark to give the rice its colour and flavour

  3. Mash the garlic once it's soft, then add the chicken and brown it off

  4. Add 2 mugs of boiling water (using the same mug you used for measuring the rice)

  5. Pour everything into a foil tray

  6. Drain the soaked rice properly with a sieve

  7. Add the drained rice to the foil tray and mix

  8. Cover with foil and bake at 170°C fan for about 50 mins

  9. Remove from oven and serve
