Chop up your onion, garlic, ginger, coriander & mint.
In a medium pan over medium heat, with a glug of oil, throw in your garlic, ginger and onion. Joujj round for a minute but don’t let the garlic burn.
Turn heat to high. Throw in your mince. Cook for 5 minutes until well browned. Turn heat off. Let cool for 5 minutes.
In a large bowl, add your mince. Throw in red onion, mint, coriander, fried shallots, hemp seeds, chilli oil, fish sauce, lime juice and mix.
Serve with lettuce boats, lime wedges, fried shallots and more coriander. Take a photo and send it my way!
