Prepare Sauce
Whisk together all sauce ingredients until combined.
Cook Filling
Heat 1 Tablespoon peanut oil.
Add ground chicken, onion, and garlic. Cook 5-10 minutes until chicken browns and onions are translucent.
Add peppers and water chestnuts. Cook 5 minutes until peppers are slightly soft.
Add sauce. Simmer on low heat until evenly coated and heated through.
Serve
Serve in lettuce leaves, topped with peanuts and green onions.
