Ruthie's Potato Salad
  1. Boil with skins on 5 medium size yellow or red potatoes (not russet) until done (maybe 20 minutes or so?  Cool.  Remove skins, should peel right off with the side of knife.  Slice about less than ¼” (yes, my mil slices, not dices.  Will break up as you stir)

  2. Dice half of a small onion

  3. Boil and dice 2 small eggs or one large egg

  4. Add miracle whip until it looks gloppy

  5. Salt and pepper to taste

  6. Best if you make the day before.  Add more miracle whip if it seems too dry
