First, make your vegan ricotta by blending all ingredients in a high-speed blender. Adjust salt and lemon to taste.
Place the ricotta in a piping or Ziplock bag and cut off the corner.
Toast your Baguette and spread it with vegan pesto. Pipe or spread the vegan ricotta over the toasted Baguette.
Top with halved cherry tomatoes, fresh basil, and balsamic glaze and enjoy!
