Corn Ribs (fried Corn)
  1. Carefully cut the corn into shape, set to one side

  2. Mix the spices (salt, white pepper, chipotle chilli flakes, ground cumin, smoked paprika) to make the salt mix

  3. Mix the sour cream with the lime, coriander and salt to make the dip

  4. Heat the oil to 175c/350f and fry the corn for 4 mins

  5. Immediately toss the fried corn through the seasoning and serve with the dip
