Crockpot Thai Coconut Chicken Soup
  1. Place chicken in the bottom of a slow cooker.

  2. Add minced ginger, garlic, red curry paste, fish sauce, lime juice, sugar, coconut milk, and chicken broth. Stir to combine.

  3. Add sliced onion, red bell pepper, mushrooms, and carrots to the pot.

  4. Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is fully cooked and tender.

  5. Remove chicken, shred it with two forks, then return it to the crockpot.

  6. Stir in baby spinach or kale and let wilt for 5-10 minutes before serving.

  7. Taste and adjust seasonings with salt, pepper, or more lime juice.

  8. Serve hot, garnished with cilantro, fresh chili, and lime wedges if desired.
