Prep wrappers: Separate lumpia wrappers one at a time. Let them reach room temperature for 3 to 5 minutes if cold. Stack and cut into 1-inch strips or triangles.
Season the chips: Lay cut wrappers in a single layer on a flat surface. Mist both sides lightly with olive oil spray. Sprinkle garlic powder, onion powder, sea salt, and any optional seasonings evenly over both sides.
Load the air fryer: Arrange seasoned wrapper pieces in a single layer in the air fryer basket. Do not overlap. Work in batches as needed.
Air fry: Cook at 375°F for 4 to 5 minutes, checking at the 4-minute mark. Watch closely during the final minute. Remove when chips turn deep, even gold.
Cool: Transfer chips to a wire rack or paper towel and rest for 2 minutes. They crisp further as they cool. Serve immediately or store in an airtight container.
