Tomato Garlic Confit Pasta Salad
  1. Preheat oven to 325°F.

  2. In a baking dish, combine the halved cherry tomatoes and peeled garlic cloves. Pour the olive oil over top and season with salt and pepper.

  3. Roast for 45-60 minutes, until the tomatoes are very soft and the garlic is golden brown and caramelized.

  4. Meanwhile, cook the pasta according to package instructions. Drain and set aside.

  5. In a large bowl, combine the roasted tomatoes and garlic (including the oil) with the cooked pasta, torn basil leaves, and grated parmesan. Toss to combine.

  6. Top with torn burrata and additional basil, if desired. Serve immediately.
