Caramelized Onion & Potato Galette

  2. Caramelize the onions on the stovetop.

  3. Roll out the pastry dough into a 14-inch circle.

  4. Spread the goat cheese on the dough, then top with the caramelized onions.

  5. Toss the potato slices with olive oil, salt, and pepper, then arrange them on top of the onions.

  6. Sprinkle the Gruyère cheese and thyme leaves over the top.

  7. Fold the edges of the dough over the filling, leaving an opening in the center.

  8. Bake the galette at 400°F for 40-45 minutes until the crust is golden brown.
