Cheesy Mushroom And Pesto Tray Bake
  1. Preheat oven to 210C/190C fan forced. Place mushrooms in a large ovenproof dish. Scatter the cannellini beans between the mushrooms and top with the tomatoes. Season well. Spray with oil and bake for 15 minutes or until the vegetables are just softened.

  2. Meanwhile, place the lemon rind, parsley, garlic and bread in a food processor. Season. Process until coarse crumbs form.

  3. Top the mushrooms with the mozzarella and pesto. Sprinkle with the crumb mixture. Bake for a further 15-20 minutes or until the crumbs are golden and cheese is melted.

  4. Sprinkle with extra parsley and serve with chargrilled bread.
