Grab a large watermelon. Cut the watermelon in half, and scoop out or cube the flesh and freeze it for 5–6 hours or overnight. You can use the entire watermelon, or just some of it.
Add the frozen watermelon to a high-powered blender or food processor.
Add the lime juice, chile lime seasoning, and mint.
Blend until smooth and creamy. Scrape down the sides as needed or add a splash of water to help it along.
Spoon it into bowls, glasses, or back into the watermelon shell. Sprinkle a little extra chile lime seasoning on top and serve cold.
