Boil thin noodles and set aside
Stir-fry mixed vegetables in hot oil with 1 crushed garlic clove until crisp-tender
Add chicken or prawns if desired (optional)
Toss in the cooked noodles
Add 1 tbsp soy sauce, 1 tbsp oyster sauce, and 1 tbsp sesame oil, plus a pinch of sugar and a splash of water
Stir-fry on high heat until glossy and caramelised
Finish with spring onions and lots of black pepper
