Add 2 tablespoons of olive oil to your pot, I used my Dutch oven.
Add in 1 chicken breast cut in half, seasoned with: garlic powder, onion powder, salt, pepper, & thyme. Cook on both sides until nice and golden brown & cooked all the way through.
Remove from the pot, shred & set aside.
Add in 1 chopped onion, 3 chopped carrots, & 2 chopped stalks of celery. Add in 4 tablespoons of butter. Sauté veggies down for a few mins until nice and soft.
Add 2-3 cloves of minced garlic, cook that for 1 min.
Add in ¼ cup flour & mixed together- cook for about 2 mins.
Add in 4 cups of chicken broth & 2 cups of half & half.
Add your shredded chicken back into the pot.
Add in a handful of chopped spinach & season to your taste. I used garlic powder, onion powder, salt, pepper, thyme, & celery salt.
Add ½ freshly grated Parmesan cheese & 16oz package of gnocchi.
Cook for a few minutes until gnocchi is cooked through.
