Rhode Island Clam Fritters
  1. Sift flour, salt and baking powder together.

  2. Combine milk, clam juice, or half and half and egg; beat thoroughly.

  3. Add to dry ingredients. Mix just until flour is moistened.

  4. Stir in clams.

  5. Drop batter from tablespoon into deep hot fat (365° to 375°). Fry until golden brown, about 3 minutes.

  6. Drain on absorbent paper.

  7. Makes about 1-½ dozen small fritters.
