Green Chicken Pozole (pozole Verde)
  1. Add all of the ingredients except the garnish to your slow cooker.

  2. Cook on low for 8 hours.

  3. Shred the chicken with 2 forks before serving.

  4. Garnish with toppings of choice, squeezing a little lime juice into each bowl.

  5. Season chicken with salt and pepper.

  6. Heat a little oil in a heavy skillet until rippling.

  7. Brown chicken on both sides.

  8. Turn heat down and cook until cooked through (165F)

  9. Add pozole ingredients to a stockpot.

  10. Bring to a simmer.

  11. Simmer for 10 minutes.

  12. Dice or shred the cooked chicken and add it to the pot.

  13. Simmer 10 more minutes, or until vegetables are tender.

  14. Serve with garnishes as above.
