Vanilla Baked Yoghurt
  1. Preheat oven to 160C

  2. Take two ovenproof dishes. A small one inside a bigger one.

  3. Into the small one, beat together all the ingredients till completely smooth (apart from the toppings)

  4. Pour warm water into the larger one, enough to surround and come around halfway up to the side of the smaller dish. This protects it while it bakes and prevents the eggs from scrambling.

  5. Bake for about 25 to 27 minutes in the middle of the oven. It’s ready when it’s risen, and the middle is still a little wobbly and just set.

  6. Let it cool to room temperature.

  7. Top with whatever you like and enjoy.
