Quick & Healthy Mediterranean Pearl Couscous Salad
  1. Prepare the pearl couscous on the stovetop. Drain in a colander and rinse under cold water for about 30 seconds, or until it is cooled to room temperature. Use the time the couscous is cooking to chop and prep all your veggies.

  2. Make the vinaigrette: combine every vinaigrette ingredient in a glass jar. Cover the jar and shake vigorously for 30 seconds or so, or until the dressing is fully emulsified and smooth.

  3. Combine all of the salad ingredients in a large salad bowl. Pour about half the dressing over the salad and mix everything together with salad spoons until well combined.

  4. Enjoy cold or at room temperature.
