Smacked Cucumber in Garlicky Sauce

  1. Wash the cucumbers and pat dry

  2. Smack the cucumbers with the side of a knife to crack them

  3. Cut the smacked cucumbers into bite-sized pieces

  4. Mince the garlic cloves finely

  5. In a small bowl, combine soy sauce, rice vinegar, sesame oil, sugar, salt, and white pepper

  6. Heat the chili oil in a small pan and add the minced garlic

  7. Stir-fry the garlic until fragrant, about 30 seconds

  8. Pour the garlic and chili oil mixture into the sauce bowl and mix well

  9. Place the cucumber pieces in a serving bowl

  10. Pour the garlicky sauce over the cucumbers

  11. Toss gently to combine

  12. Sprinkle sesame seeds on top

  13. Let sit for 10-15 minutes before serving to allow flavors to meld

  14. Serve chilled or at room temperature
