Wash the cucumbers and pat dry
Smack the cucumbers with the side of a knife to crack them
Cut the smacked cucumbers into bite-sized pieces
Mince the garlic cloves finely
In a small bowl, combine soy sauce, rice vinegar, sesame oil, sugar, salt, and white pepper
Heat the chili oil in a small pan and add the minced garlic
Stir-fry the garlic until fragrant, about 30 seconds
Pour the garlic and chili oil mixture into the sauce bowl and mix well
Place the cucumber pieces in a serving bowl
Pour the garlicky sauce over the cucumbers
Toss gently to combine
Sprinkle sesame seeds on top
Let sit for 10-15 minutes before serving to allow flavors to meld
Serve chilled or at room temperature
