To Assemble:
Preheat panini press or oven to 350 F. Shred chicken; set aside. To a pan over medium heat, add onions, garlic, and chopped chilis, stirring until lightly browned and fragrant (~2 minutes).
Add chicken and seasonings, cooking until flavours infuse (~5 minutes).
Assemble quesadillas: cheese, chicken filling. Cook open-faced for ~2 minutes until cheese is melted and pliable, then fold one side over itself and continue cooking for ~7 minutes, until browned on both sides. Enjoy!
