Baked Breakfast Bowls
  1. Preheat oven to 400 degrees.

  2. Place hasbrown patties in bottom of baking dish.

  3. Blend egg whites and cottage cheese until smooth.

  4. Place roughly chopped spinach on top of hasbrown, then peppers, then charro beans.

  5. Pour egg whites and cottage cheese over vegetables.

  6. Place dishes on a pan, Place in oven with aluminum foil or another pan on top for the first 20 minutes.

  7. Remove pan from top and then finish baking for another 25 minutes.

  8. Pull out. Let cool, and place in fridge. Reheat at 2 minutes.
