Quinoa Taco Mix
  1. Make the filling: Warm the oil in a large skillet over medium-high heat. Add the onion and bell pepper and sauté until the onion starts to brown, about 5 minutes. Add the jalapeño, quinoa, and garlic and cook for another minute.

  2. Sprinkle in the chili powder, cumin, and smoked paprika and stir until everything is coated, then cook for another minute. Your place should smell pretty fucking dope right about now.

  3. Fold in the mashed black beans, lime juice, and Bragg's, and cook just long enough to warm up the beans while lightly stirring, about another minute. No need to mash that shit up anymore. Remove from the heat.

  4. Put together some motherfucking tacos: Throw that mix on a corn tortilla with some pico de gallo, lettuce, onion, and guacamole and get down. Serve right away. Leftovers are great on some nachos, just sayin'.
