Magic Radish Mayonnaise
  1. Whisk egg yolk, apple cider vinegar, mustard & salt until smooth

  2. Very slowly drizzle in the olive oil while whisking continuously (alternatively use a food processor)

  3. Start slowly until the emulsion thickens, then increase to a steady stream

  4. Once thick & glossy, fold through parsley & lemon zest

  5. Fold in finely sliced radishes

  6. Taste & adjust salt or acidity if needed with lemon juice or more vinegar
