  3. Cover and let the dough double in size at room temperature (72F)

  4. Use the aliquot method to measure the size growth

  5. Pre-shape the dough, let it rest 15 min, and final shape

  6. Place in a proofing basket, cover, and refrigerate for 12 hrs

  7. Bake in a preheated oven at 450F for 30 min
