Heat grill to medium-high heat. Sprinkle rib sections with the barbecue spice rub and rub it into the meat.
Place ribs on hot grill long enough to achieve a nice char and grill marks on all sides (this will only take a few minutes per side).
Once ribs are seared, remove them from the grill and place them in a large slow cooker and cook on low heat for 6-7 hours.
About half an hour before serving, whisk together the ketchup, brown sugar, vinegar, honey, soy sauce and spices in a small bowl.
Heat oven to 375 F. Remove the rib sections from the slow cooker and place in a shallow roasting pan.
Pour sauce mixture over the ribs and bake in the oven for 30 minutes or until the sauce is bubbly and browned onto the meat.
