Spicy Peanut Butter Chicken Wings
  1. Preheat oven to 425 degrees and add a cooling rack to a rimmed baking sheet.

  2. Open chicken wings and bloat the skin with a paper towel.

  3. Place the chicken wings onto the cooling rack (that is sitting inside the baking sheet) in an even layer.

  4. Bake for 45 minutes or until the wings are crispy and fully cooked. Flip the wings over half way through baking.

  5. Right before the wings are done cooking start putting together your sauce.

  6. In a large bowl whisk together peanut butter and hot water until smooth.

  7. Whisk in vinegar, sriracha, Truvia, ginger, garlic and lemongrass.

  8. Add the hot wings to the peanut sauce and toss to evenly coat.

  9. Sprinkle the wings with chopped peanuts and green onions.
