Adam D’sylva’s Prawn And Zucchini Spaghettini
  1. Salt a large pot of water to taste like the sea, then bring to boil.

  2. Add spaghettini and boil until ¾ cooked – so still quite underdone.

  3. Reserve 2 cups of pasta water before straining pasta.

  4. Meanwhile, place a heavy-based pot over a medium heat and add the olive oil.

  5. Sauté the garlic and chilli until aromatic.

  6. Deglaze with the white wine.

  7. Add the zucchini, thyme and 1 cup of pasta water.

  8. Cook the zucchini until it becomes tender and breaks down.

  9. Add more pasta water, then the prawns, spaghettini and parsley.

  10. Stir constantly, until the prawns are cooked and pasta is coated in sauce.

  11. Check the seasoning (there should be enough salt from the pasta water), add freshly cracked pepper and serve.
